This month's CNS Spotlight focuses on Andrew Jackson, Assistant Culinary and Nutritional Services Director from Ohio Living Rockynol.
What is the best part about your job?
Being able to watch residents and staff change and grow over time.
What is the worst part of your job?
Getting too attached to the residents. It’s hard sometimes to say goodbye.
What do you consider to be your greatest achievement?
Still working on that one.
What is the most unusual foodservice/catering request you have ever received?
We would have residents ask for two peas as their vegetable of the night. Not much going on with two peas on your plate.
If you weren’t in foodservice what would you be doing?
I always wanted to be a cast member on Saturday Night Live. It helps if you are actually funny.
If you had a time machine what historical event or era would you visit?
July 20th 1969. The moon landing. I have always been fascinated with outer space.
Which talent would you most like to have?
I would like to be able to fly!
If you could change one thing about yourself, what would it be?
My flat feet.
Which living person do you most admire?
My mother. She is the strongest person I know!
What would be your dream vacation?
Doesn’t matter, as long as I’m with family and good friends.
What is your favorite meal?
My mother’s meatloaf and mashed potatoes.
If you could eat dinner with anyone living or dead, who would it be?
What is your guilty pleasure?
Drumstick ice cream cones.
What will people always find in your refrigerator?
Plain yogurt, apples and cold brew coffee.
What is your most treasured possession?
My grandfathers’ tenor saxophone.
What food fad do you wish had never started?
Pumpkin spice everything. Please stop now!
What activity is at the top of your bucket list?
Travel to outer space.
What is the weirdest food you have ever eaten?
Are you a morning or evening person?
What are your words to live by?
Just take it one day at a time.
