Celebrating National Chili Month

As the leaves change colors and cooler temperatures set in, October also ushers in National Chili Month. The Ohio Living Lake Vista Culinary team is known for their hallmark chili recipe, among other savory fare, which is served in two dining rooms on campus. In the Heron Dining Room, geared toward independent living residents, lunch specials rotate by season, and it’s officially chili season!

 

“We have a great team of staff who genuinely care and add lots of love to the food,” said Venice Tomidajewicz, assistant culinary director at Ohio Living Lake Vista. “I believe what sets us apart from other senior living-focused culinary teams is our commitment to nutritious options that also taste good. We use certified angus beef and higher-quality-grade supply items in all our selections.”

 

Moving to a life plan community shouldn’t mean compromising on what you like, and that includes food. “Once a month, we host a forum with our independent and long-term care residents, to hear what menu items they are craving or would like us to add to the fold,” explained Tomidajewicz. “Our main goal is to ensure that everyone has access to the types of foods that they enjoy.”

 

Lake Vista Chili

Ingredients:

2 pounds ground beef

1 medium yellow onion chopped)

1 medium green bell pepper chopped

1 tablespoon granulated garlic

5 tablespoons onion powder divided

Salt and pepper to taste

2 15-ounce cans of kidney beans

1 15-ounce can of diced tomatoes

1 28-ounce can and 1 8-ounce can of tomato sauce

2 cups of water

2 tablespoons chopped garlic

3 tablespoons chili powder

1 tablespoon dried basil

 

Preparation Instructions:

  1. Cook ground beef, onion and green pepper in pot.
  2. Add granulated garlic, 2 tablespoons of onion powder and salt/pepper.
  3. Once ground beef is cooked through, drain any excess fat out of the pot.
  4. Add the rest of the ingredients to the stock pot.
  5. Bring to a boil, then turn down to simmer, stirring occasionally.
  6. Serve with a corn muffin or oyster crackers and enjoy!
