Resident Recipe: Twisted Red, White and Blue Dessert

In honor of Memorial Day, Health Center residents (Eleonore, Louise, Frances and Carol) made a delicious red, white and blue layered shortcake that staff and residents enjoyed at an afternoon social.


2 pkgs (3.4oz ea.)Jello Vanilla Instant Pudding
1 QT. cold milk
2 c. thawed Cool Whip Whipped Topping
1 (12oz) prepared angel food cake, cut into 1/2" cubes
1/3 c. orange juice
1 1/2 c. sliced fresh strawberries ***I increased both of the berries to 2c. ea.
1 1/2 c. fresh blueberries
5 oz. Baker's White Chocolate, grated


Beat pudding mixes & milk in large bowl with whisk for 2 mins. Gently stir in Cool Whip.

Place cake cubes in large bowl. Drizzle orange juice over cake, then toss to coat. Place half of the cake cubes in deep bowl; cover layers of half of each the pudding mixture,strawberries, blueberries, & grated chocolate. Top with layers of remaining cake cubes, pudding mixture, strawberries, blueberries & grated chocolate.

Refrigerate at least 30 mins. before serving. Store leftover dessert in refrigerator.

The residents really enjoyed making and eating the dessert!
