Q & A with Chef Vic
What is the best part about your job?
Interaction with the residents each day, to see the smiles on their faces says a thousand words. It really warms my heart.
What do you consider to be your greatest achievement?
Raising two of the most beautiful sons a father could ever have. To watch them grow from little guys to grown men who take life by the horns and enjoy it every minute of it. I’m so proud of them.
What is the most unusual foodservice/catering request you have ever received?
When a member of a club I was working at came to the back door and handed me a bag of pheasant and quail and said, 'my friends and I will be in the grill room waiting for dinner.' Talk about pressure!
If you weren’t in foodservice, what would you be doing?
Emergency room doctor.
If you had a time machine what historical event or era would you visit?
I don’t think I would want to go anywhere. I was born in 1956 (and) throughout my life, I have experienced and seen some of the greatest things you could have imagine: from television, Woodstock, first man on the moon, iPhone, computers, and iPads.
If you could change one thing about yourself, what would it be?
Lose weight eat healthier. The only problem with that is I love food!
What would be your dream vacation?
In a log cabin next to a beautiful lake in the woods. That is so peaceful.
What is your favorite meal?
Veal alla Diavola with hot roasted peppers
If you could eat dinner with anyone living or dead, who would it be?
Jesus Christ. He changed the world
What is the weirdest food you have ever eaten?
Wild boar and alligator bbq ribs
What are your words to live by?
"I can do all things through Christ, who gives me strength."
